Vellum

Spatchcock

Sit down a second.

Dad, I’m going to be...

Just sit down. Do you remember when we kept Babbs?

Yes.

You know that we never ate her.

I hadn’t thought about it.

When she died I took her into the shed and plucked the feathers from her. Do you know how to remove the innards?

No, uh. I’ve not.

You cut out the tail, keeping the intestine attached, then you reach up to the heart and scoop down. It comes out as one but it might take a few tugs. The lungs take another scoop each side of the spine as they’re further into the body. I turned her over to cut through the ribs and remove the spine. Looked at the muscles on her back and even though her wings were bent like a dinosaur fossil I could see your back. I thought about all of the eggs we had from her and I couldn’t remove her spine. I gathered up all of the feathers and bits of her and put her in that box we buried.

That’s why you wouldn’t let me look at her one more time!? I have to go.

No. You're going to make more. It will make people buy more just to... Supply and demand. You are paid to raise the supply.

You know how long I’ve wanted this.

Yes, and I don’t know how else to tell you.
